Ingredients:

  • 1 lb. gnocchi
  • 1 package Beyond Italian sausage, sliced
  • 1 red onion, sliced
  • 1 cup mini peppers, sliced
  • 1 pint grape tomatoes
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions:

  1. Preheat your oven to 425°F and line a large baking sheet with parchment paper.

  2. In a large bowl, combine the sliced Beyond Italian sausage, red onion, mini peppers, grape tomatoes, minced garlic, and olive oil. Toss everything together to coat, and season with salt and pepper to taste.

  3. Add the gnocchi to the bowl and toss everything together to coat. Spread the mixture out evenly on the prepared baking sheet.

  4. Bake in the preheated oven for 25-30 minutes, or until the gnocchi is cooked through and the vegetables are tender and slightly charred.

  5. Serve the sheet pan gnocchi immediately, garnished with fresh basil if desired. Enjoy!

Note: You can also add some shredded Parmesan cheese on top before serving if you like. To make cleanup easier, you may want to cover the baking sheet with foil before adding the parchment paper.
