Butternut Squash Schnitzel

As the sun began to rise on May Day, the small village of Willoughby was already bustling with activity. The town's annual May Day festival was just getting started, and everyone was eager to join in the celebration. The smell of fresh flowers filled the air, and the sound of traditional music could be heard from every corner.

Ingredients:

  • 1 medium-sized butternut squash, peeled and sliced into 1/2 inch thick rounds
  • 1 cup all-purpose flour
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten
  • 2 cups panko breadcrumbs
  • 1/4 cup vegetable oil
  • Lemon wedges, for serving

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a shallow dish, mix together the flour, paprika, garlic powder, onion powder, salt, and pepper.
  3. In another shallow dish, beat the eggs.
  4. In a third shallow dish, spread out the panko breadcrumbs.
  5. Dip each butternut squash round into the flour mixture, then shake off any excess.
  6. Dip the floured squash into the beaten eggs, making sure it is coated on both sides.
  7. Finally, dip the squash into the panko breadcrumbs, pressing the crumbs onto the squash to help them adhere.
  8. Heat the vegetable oil in a large oven-safe skillet over medium-high heat.
  9. Once the oil is hot, add the breaded squash rounds to the skillet in a single layer. Cook for 3-4 minutes on each side or until golden brown.
  10. Transfer the skillet to the preheated oven and bake for an additional 10-15 minutes or until the squash is tender and fully cooked.
  11. Serve hot with lemon wedges on the side.
