Ingredients:

  • 1 cup finely chopped mushrooms
  • 1 cup grated carrots
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • 3 cloves of garlic, minced
  • 1 can (15 oz) of black beans, drained and rinsed
  • 1 can (15 oz) of corn kernels, drained
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 2 tbsp tomato paste
  • 2 tbsp soy sauce
  • 2 tbsp Worcestershire sauce (use a vegetarian version if desired)
  • 1 tbsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water) (or regular egg)
  • 1/4 cup ketchup (for topping)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat a tablespoon of oil over medium heat and sauté the mushrooms, carrots, onions, bell peppers, and garlic until soft, about 5-7 minutes.
  3. In a large mixing bowl, combine the sautéed veggies with the black beans, corn kernels, breadcrumbs, oats, tomato paste, soy sauce, Worcestershire sauce, thyme, rosemary, basil, salt, pepper, and flax egg. Mix until well combined.
  4. Transfer the mixture into a 9x5 inch (23x13 cm) loaf pan and smooth out the top.
  5. Spread ketchup on top of the mixture.
  6. Bake for 45-50 minutes or until the top is golden brown and the loaf is firm to the touch.
  7. Let the loaf cool in the pan for 10 minutes before slicing and serving. Enjoy!
