Ingredients:
- 1 can (12 oz) Pilsner beer
- 2 cups tomato juice
- 1 large sweet potato, peeled and diced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 onion, diced
- 2 jalapeño peppers, seeded and diced
- 1/2 cup dark chocolate, chopped
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) chili beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- Salt and black pepper, to taste
- Olive oil
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional)
Instructions:
Heat the oven to 350°F.
In a Dutch oven, heat 2 tablespoons of olive oil over medium heat.
Add the diced onions and cook until translucent.
Add the diced sweet potato and zucchini and cook for about 5 minutes.
Add the diced red bell pepper and jalapeño peppers and cook for an additional 5 minutes.
Add the chili powder, cumin, smoked paprika, and cayenne pepper (if using), and cook for another minute or so, stirring frequently.
Add the beer, tomato juice, diced tomatoes, chili beans, and kidney beans, and stir to combine.
Bring the chili to a simmer, then cover the Dutch oven with a lid.
Transfer the Dutch oven to the oven and bake for 30 minutes.
After 30 minutes, remove the Dutch oven from the oven and stir in the chopped dark chocolate.
Taste the chili and adjust the seasoning as needed, adding salt and black pepper to taste.
Serve the vegetarian chili hot, garnished with chopped cilantro and a dollop of sour cream or Greek yogurt, if desired.
