Ingredients:

  • 1 red onion, chopped
  • 1 red pepper, chopped
  • 1 zucchini, chopped
  • 2 carrots, chopped
  • 1 can of diced tomatoes (14.5 oz)
  • 1 can of chili beans (15 oz)
  • 1 can of chickpeas (15 oz)
  • 2 cups of tomato juice
  • 1 can of beer (12 oz)
  • 1/4 cup of dark chocolate chips
  • 2 tbsp of olive oil
  • 2 tsp of chili powder
  • 1 tsp of ground cumin
  • 1 tsp of smoked paprika
  • Salt and pepper to taste

Garnish:

  • Greek yogurt
  • Corn chips
  • Ritz crackers
  • Cheddar cheese, shredded
  • Cilantro, chopped

Instructions:

  1. Preheat your oven to 400°F.
  2. In a large mixing bowl, toss the chopped onion, red pepper, zucchini, and carrots with the olive oil and a pinch of salt and pepper.
  3. Spread the vegetables out in a single layer on a large baking sheet and roast them in the oven for 25-30 minutes, or until they are tender and slightly charred.
  4. In a large pot or dutch oven, heat the tomato juice and beer over medium heat.
  5. Add the can of diced tomatoes, chili beans, and chickpeas to the pot.
  6. Add the chili powder, cumin, smoked paprika, and a pinch of salt and pepper to the pot.
  7. Add the roasted vegetables to the pot and stir everything together.
  8. Let the chili simmer for 15-20 minutes to allow the flavors to meld together.
  9. Add the dark chocolate chips to the pot and stir until they have melted and fully incorporated.
  10. Taste the chili and adjust the seasoning as necessary.
  11. Serve the chili hot with a dollop of Greek yogurt, a handful of corn chips and Ritz crackers, a sprinkle of shredded cheddar cheese, and a pinch of chopped cilantro on top.
